We were explained everything in details.
Operators answered to our questions and told us many curious issues about the entire production and working process.
I already knew something about chocolate working that I heard mention by my dad who is a refrigeration technician and he goes often inside this kind of factories: for example I know how the Easter Eggs are realized but seeing all that chocolate live is quite another thing.
First of all immediately at the entrance, still on the road, before crossing the threshold and set foot inside, we are swallowed by the chocolate smell: once entered it becomes even more intense and it is absorbed by clothing, too.
Go in, put the little cap due to the hygiene and let’s go discovering the working rooms.
From the first phases people obtain the cocoa that is on the basis of all the following workings.
It starts from the roasting (a very complicated phase), then the selection and the mixing according to the product type people want to get.
The milling is made by traditional stone mills, the Molinos.
Thanks to these mills’ stones, the chocolate will be rustic and raw unlike all the ordinary chocolates.
In special bowls a fluid paste is obtained: after have sediment the right time it will be humidity free.
The tempering will give brightness to the chocolate to proceed then with packaging.
Why is Taza a particular company?
First of all because they experiment, they are pioneers. Their chocolate can’t be described, you have to taste it absolutely.
Not only the classic particular chocolates like the red pepper ones but also: salty, cinnamon, vanilla, chili, extra dark, pure, sea salt, coconut, raspberry, 100% biological variety, gluten, soya and lactose free and even kosher ones.
All are so unique when you taste them.
The aim is to treat cocoa to a minimum, making so unique a product with a very bold taste.
Ethics and transparency
As it often happens here in the United States, the most important aspect is the ethic one: it begins right from the cocoa purchase: the company has created a program of sustainable provisioning to guarantee quality on one side and transparency on the other one.
Respect of environment, equal work practices, biological cocoa and fair-trade commerce are the keywords.
You think they publish the reports as regards how much they pay cocoa in origin, right to show to customers their complete sustainability and honesty.
The Taza company is relatively recent: it was launched in 2005 as official brand and designing specifically all packaging.
